Ingredients
130ml Isle of Moo milk (green or blue carton)
135g plain flour
1 tsp baking powder - to give the pancakes lots of bounce!
1/2 tsp salt
2 tbsp caster sugar
1 large egg
2 tbsp melted Manx butter
And whatever delicious toppings your parents allow! Nuts, syrup, fruit, cream - have a moo-ch in your cupboard!
Method
There are a few steps here so you'll probably need your folks to get involved...and just a warning, things will probably get messy!
Sieve the flour, baking powder, salt and sugar into a large bowl. That way, all the weird, gnarly lumps won't get in the mix. In a separate bowl, beat the egg along with the Isle of Moo milk and finally, whack in your melted butter too. This will form your Manx dairy power mix!
Pour the milk mix into the dry flour mix and beat with a fork. Really go for it! You'll end up with a batter smoother than a cow with shades on!
In a heated pan, add a small dollop of butter until it melts, then ladle a spoonful of your absolutely moo-tiful mix. When it starts to snap, crackle, bubble and pop, it's time to flippety flip it!
When both sides are as golden as the syrup you've been eating straight from the jar (we saw you!) then, it's time to finish up with delicious toppings of your choice.
