Ingredients
500ml whole Isle of Moo milk
150g caster sugar
4 egg yolks
1/4 nutmeg (grated)
100g of your favourite milk or dark chocolate
300ml double cream
100ml bourbon (Obviously, this is for adults only. It tastes just as good without if you're just making for kids...promise...cough)
Cinnamon stick to stir
Method
Whisk the eggs and sugar until the mixture is pale and thicker than the stupidest friend you have. Yes, that thick. Keep whisking, kiddo!
Place your chocolate in a large bowl before gently simmering the Moo milk with the nutmeg. Once the milky mixture starts to bubble slightly, pour it over your bowl of chocolate. Stir away! Stir with the frantic vigour of an Olympic rower! Stir my pretties, stir!! Ahem...so, yeah keep stirring until it's the chocolate is melted. Nice one.
Right. This is when it all becomes a bit of a faff. Pour a bit of the choccy mixture into the egg white mixture and whisk all the time. Add 1/3 of the milk and whisk again before repeating two more times until the milk has been welcomed into the warming chocolately wonder.
Pour your eggnog into a pan along with the double cream. Simmer away until it thickens with a glossy shimmer resembling a Labrador's coat in the rain. Adults can add their bourbon now before adding to glasses to chill. But kids? No bourbon! Seriously, it's frowned upon.
Finally, grate some nutmeg over the top, whack a cinnamon stick in there and get your festive party started!
